It’s December! Which means we can officially start feeling festive. Last year I came up a recipe for some vegan, gluten free ginger biscuits. They were pretty damn good, I have to say. But don’t take my word for it – here’s the recipe.
Is it really Christmas if you’re not making something ginger-themed? I’m not sure. So this year I decided I’d like to try my hand at a Christmas version of one of my favourite healthy snacks – energy balls AKA bliss balls.
These Gingerbread Bliss Balls are the perfect snack for the afternoon slump, or if you need a pre-breakfast burst of energy. I like to have one when I wake up, do a workout, and then have breakfast after.
They’re packed with dates (oh hello, energy), walnuts (holla at me omega-3 essential fatty acids), ginger and mixed spice (got to make it Christmassy), orange juice (hey, vit C), and almond flour.
I’ll be honest and say that the almond flour came about purely by accident because I made the first and second batches far too wet, and I used almond flour to dry up the mixture so I could roll it into something vaguely resembling a ball. Pre-almond flour it was more like a teaspoon of porridge. Anyway, I ended up liking this accidental addition so decided it could stay.
Now, you can stick with the recipe plain and simple. Or if you like your food to look extra pretty, might I suggest you roll them in crushed walnuts, dessicated coconut or sesame seeds? You won’t regret it.
