Happy Monday, everyone! It’s time for a new week. Anyone have any exciting plans? I’m back in work after two weeks off. It feels like I’ve had a month off, so I’m definitely wondering if I can remember what my job is. But hey ho, I’m sure I won’t be the only one.
Today I’m sharing a recipe for Chocolate & Pomegranate Porridge. I randomly made this for myself last month, and I have it almost every day now (creature of habit, me?). It’s THAT good.
I use cacao to make it chocolatey (and give it a bucket of those lovely antioxidants), peanut butter for protein, pomegranate seeds and blueberries. The tang of the pomegranate against the creamy peanut butter is a-ma-zing. If you’re feeling extra indulgent like I was when I shot these photos, you can chop up a square of dark chocolate and sprinkle it over the top. Yes, you’re damn right you can put chocolate on your breakfast. It’s vegan, and can easily be made gluten free if you use GF oats.

Chocolate & Pomegranate Porridge (Vegan)
Add the oats, oat milk and water to a large saucepan over a low heat, and stir.
When the liquid has almost evaporated, add the cacao and continue to stir.
Pour into a bowl and add your delicious toppings.
